Enjoy coconut?? Still missing bread?? Give this a try!!

Coconut Bread

I’m not a big baker, but I can appreciate those who are. For those budding Primal bakers who still miss bread, why not try to make some with coconut flour? Slightly sweet and fairly light (as opposed to the denser breads made with almond meal), this coconut bread should do the trick.

Ingredients:
6 eggs
1/2 cups ghee (or butter)
1-2 tablespoon honey, depending on taste
1/2 teaspoon sea salt
1 teaspoon baking powder
3/4 cup coconut flour

Method:
Preheat your oven to 350. Whisk it all together, or blend in a food processor until all lumps are gone. Grease a bread pan with butter or coconut oil and pour your batter in. Bake for 40 minutes.

If we split it up into six servings each slice will, according to FitDay, have:
30.9 g fat
13.2 g carbs (9 g fiber)
8.35 g protein

Coconut Pancakes

Drizzle these with honey and berries, wrap up some bacon and eggs for a Primal breakfast burrito, or just eat them plain. These things are incredibly easy to make.

Ingredients:
4 eggs
1/4 cup coconut flour
1/4 tsp vanilla extract
1 pinch nutmeg
1 pinch cinnamon
1 tablespoon honey
1/4 cup coconut milk (full fat)

Method:
Mix these ingredients and let them sit for five minutes. Oil or grease up your pan and heat over medium heat. Pour about a 1/4 cup of batter for each crepe, allowing each side to brown before flipping it.

Without accounting for toppings or cooking fat, FitDay says the whole batch amounts to:

37.2 g fat (20.9 g saturated)
42.2 g carbs (19.4 g fiber)
30.6 g protein

Amazing Father’s Day Paleo Brunch

Now for the Father’s Day Fun Topping

A paleo twist on Bananas Foster

2 bananas -sliced

1/2 walnuts and 1/2 macadamia nuts -Combine in food processor and pulse

2 tbs. agave

Saute banana in 1 tbs. vegan butter add 1/4 tsp. vanilla

Remove bananas to plate when slightly browned & softened

Heat walnuts and macadamia nuts in same pan adding cinnamon and agave.  Top with unsweetened coconut that you put in oven at 300 degrees for just a minute or so till it starts to turn a little brown.

Place warm bananas over almond pancakes and generously top with warm nut mixture.  Add a couple fresh strawberries and couple slices of peaches.

That funky looking thing on the side is chicken sausage with apple.  Bottom line, nothing was left at the end of the meal.

An incentive for upcoming Paleo Competition

Since starting at IronTribe, I have thrown myself into the Paleo lifestyle 100%.  And truth be told, I have so much energy and feel on top of my game all the time….alot to say for a guy who has hit the big 50.  I am a believer.  To give those of you on the fence for the Paleo Challange a little inspiration, below is a pic of my breakfast this morning.  Paleo pancakes, egg, macadamia nuts and slice of pineapple.  And you know what, it tastes GREAT.  So I say go all in! And no, Forrest hasn’t paid me for this announcement…although contributions are accepted:)

Basil Grilled Chicken

This is one of Paula Deen’s recipes, which always are amazing!  However, she LOVES butter!  I cut the amount of butter in half for this and it still is refreshing and delicious!

  • 3/4 teaspoon coarsely ground black pepper
  • 4 skinned chicken breast halves
  • 1/4 cup freshly chopped basil leaves, plus 2 tablespoons freshly minced basil leaves
  • 1/3 cup (5 tablespoons) butter, melted, plus 1/2 cup (1 stick) butter, at room temperature
  • 1 tablespoon grated Parmesan
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Fresh Basil, optional for garnish

Prepare charcoal grill.

Press the coarsely ground pepper into the meaty side of the chicken breast halves. Stir the chopped basil into the melted butter. Brush the chicken lightly with this mixture. In a small bowl, combine the softened butter, minced basil, Parmesan, garlic powder, salt, and pepper. Beat at low speed with an electric mixer until smoothly blended. Transfer to a small serving bowl; set aside.

Grill the chicken over medium coals for 8 to 10 minutes on each side, basting frequently with the remaining melted butter mixture.

Serve the grilled chicken with the basil-butter mixture. Garnish with fresh basil springs, if desired.

Another Fantastic Journal!

This one comes from Craig Niedenthal from the 7:15 am 101 class.  Craig is off to a fantastic start!  Check out his last two days of nutrition.

Day 1

#1.  1/2 Banana / Protein shake with strawberries and
#2.  2 slices beef jerky and a Lara bar
#3.  Salad – Grilled chicken / lettuce / tomato / carrots / vinaigrette
#4.  3 slices of deli chicken / 3 small carrots / handful of almonds
#5.  Stuffed pepper with ground beef / salad with vinaigrette
#6.  Mango and trail mix

Day 2

#1.  1/2 banana and slice of beef jerky (pre workout)
#2.  3 Paleo Cakes / glass of unsweetened choc almond milk
#3.  2 slices of beef jerky and a Lara bar
#4.  Spinach salad  / chicken / 1 egg / broccoli / tomato / vinaigrette / green tea
#5. Shrimp / spaghetti squash / olive oil / tomatoes / onions / chicken broth

Great job Craig!  Who said Paleo nutrition can’t be delicious as well as incredibly nutritious?

Finally I learned how to post recipes!!!

It is our desire here at  ITF to help make the switch to Paleo eating as easy as possible.! We will post weekly menus with the source/recipe to help guide your meal times. It will be under “What’s for Dinner at the Walden’s” category.  I mostly cook from Elana Amsterdam’s website., www.elanaspantry.com Most of her recipes are gulten free, although some of them do have dairy.   All of the recipes may not be perfectly Paleo, but they will be close:)

I know a lot of you are trying a lot of new recipes and switching to the Paleo way of living.  Please feel free to post your own recipes and share it with the Tribe!

Old School Advice

Do you ever go to youtube and have the intention of watching one video then end up watching at least seventy-five others? Well, this happened to me a few days ago; however, this time I came across practical information. While procrastinating on something I’m sure, I found some great videos from Jack Lalanne’s old television show. For those who don’t know him, Jack Lalanne is a fitness icon and big promoter of the infamous “Juicer.” Anyways, while I was digging around one video really caught my attention. Isn’t it really amusing how the fitness industry changes decade after decade? However, good advice on proper nutrition has been around for thousands of years! Enjoy the video of Lalanne. Watch more if you have the time, he’s definitely a good inspiration.
